Ratatouille Nicoise



Ratatouille Nicoise

Since the release of the Hollywood blockbuster "Ratatouille", this traditional French dish enjoys a renewed international revival. As its true name Ratatouille Niçoise indicates, it is believed to have originated in Nice, France. It is a type of vegetable stew, and although you will find various international recipes for it, this is a genuine and easy one. It is also delicious.

Ingredients for 4 to 6:

1 lb of zucchini
1 lb tomatoes
1 bell pepper
1 onion
1 eggplant (this is the modern version; authentic ratatouille niçoise uses no eggplant)
2 garlic cloves
olive oil
Salt and pepper to taste




Slice zucchini (cube) and onion finely;
Remove skin from tomatoes (optional) and slice (cube);
(slice eggplants -cube-);
Slice peppers;
Chop garlic;
Using large thick-bottom cooking pot, sauté onions and garlic in olive oil;
Add peppers and tomatoes;
Stir and cook for 15 minutes;
Add zucchini (and eggplant);
Stir and cook in reduce heat;
Cover and simmer for 20 to 30 minutes.

Serve with bread croutons or rice, meat or fish, cold or warm. Can be enjoyed fresh or reheated (tastes even better).
