Peppercorn Steak, Steak au Poivre

Peppercorn Steak, Steak au poivre

Ingredients for 4:

4 sirloin steaks
Cognac, 2 fl oz.
4 tablespoons sour cream
Crushed peppercorns, 4 oz.
2 tablespoons olive oil
1 tablespoon butter
Salt to taste

Rub crushed peppercorn deep on each side of steak; with large iron skillet over high heat fry steak in oil and butter for 2 ˝ minutes each side (it is served rare).

Remove steaks from skillet; continue to heat; pour cognac into skillet and let it heat up, then tilt skillet to let the cognac ignite into a flame (carefully!), or ignite it with a lighter; give the flame a few seconds to subside; add sour cream, sprinkle salt and mix into a sauce. Pour sauce over steaks and serve. Usually served with potatoes, mashed potatoes or French fries.
